Microbiological profile of street-food sold in the city of Xanxerê-SC

With the pace of life increasingly fast, the habit of eating outside the home has become commonplace, however, these foods purchased ready are not always safe from the point of view of food safety. The objective of the work was to evaluate the physical-chemical and microbiological quality of snacks sold at fixed points and food trucks in accordance with current legislation. Fifteen samples of snacks (hot dog (3), x-salad, (3) natural sandwich (3), stuffed cake (3) and brigadeiro (3)) sold in different establishments in the city of Xanxerê, in the catarinense west, were randomly collected. The results showed that 40% of the analyzed samples are in disagreement with the standard established by the legislation, and most of these had raw ingredients as possible suspects of contamination by thermotolerant coliforms at 45 ºC. It was evident that the hygienic-sanitary procedures adopted by the establishments are deficient, indicating the need for training handlers in good practices.
